{Grilled Pineapple with Brown Sugar Glaze}

Need a tasty side dish to go along with all that BBQ-ing you've been doing this Summer?  May I recommend grilled pineapple with brown sugar glaze.  Every time I make this for people they love it and ask for the recipe.


Grilled pineapple with brown sugar glaze

Ingredients:
Fresh pineapple
1-2 cups brown sugar
1 stick butter
1 tsp vanilla extract
a pinch or two of sea salt

1. Cut pineapple into rounds.  I like to remove the middle but you don't have to.  I usually do 2-3 pineapples.  Turn grill on to high heat.

2.  In a bowl melt butter.  I find by cubing the butter it melts faster.
3. Add brown sugar to melted butter and stir until well incorporated.  Put mixture back in microwave for 20 more seconds - this helps melt the sugar and butter together.

If you are doing this on the stove top, stir mixture until well incorporated on medium-low.  Be sure and remove from heat before the mixture comes to a boil!
4.Add Vanilla and a couple pinches of Sea Salt.
5.Try your hardest not to eat all the brown sugar/carmel mixture.  It's harder then you think!
6.Place pineapple circles onto grill.   Quickly brush each circle with a generous amount of the brown sugar glaze.  

Flip circles, glazed side down, then glaze the other "naked" side.

Wait 2-3 minutes until glaze has carmelized and grill has produced beautiful grill marks, then flip over and grill other side.

I usually repeat this process twice (sometimes three times depending on how thick I cut the pineapple).

7.Remove and serve.  This dish is best served while still warm.  

I like to serve this as a side to grilled Teriyaki chicken or it can be added to a Teriyaki burger.

This can also be served as a dessert on top of vanilla ice cream.
