On days when I embrace being lazy for dinner and throw healthy, homemade meals to the wind we have Cakies.

Cakies = cake batter pancakes.

They are delicious, quick and a kid crowd pleaser.

If you Google it or look it up on Pinterest you will find many versions. I'm sharing the way we make them.

For the pancakes:
1 box chocolate Devil's food cake mix
1 cup pancake mix (homemade or store bought)
1-2 cups milk
3 eggs

For the Vanilla glaze:
1 stick butter - melted
powdered sugar
1 teaspoon vanilla
1 vanilla bean (optional)
milkIn a large mixing bowl (we use an 8 cup measuring bowl so we can pour directly from bowl onto griddle) add eggs and beat well. Add cake mix, pancake mix and milk. Combine well. You can add more milk to get to the consistency you like. The thicker the batter the more dense the pancake will be.

Cook on griddle like you would pancakes.

To make glaze add powdered sugar (between 1-3 cups) slowly into melted butter. Add vanilla extract and vanilla beans (just seeds - I only do this when I have them on hand). Thin glaze out with milk until a good glaze consistency.

I just eyeball how much sugar and milk to add until I like how the glaze looks.

Drizzle glaze over warm Cakies, add fresh fruit on top. We love to add strawberries and raspberries to the top. The tartness of the berries goes so well with the sweet glaze and cakies.You can do this with other cake mixes but we enjoy the chocolate cakies best. We also do this on the morning of each child's birthday.
