Looking into the fridge I realized that I had a few ingredients I could throw together to make some egg rolls. A fast and easy meal that everyone loves.
I thought I'd share the recipe here in case you need a new fast and easy recipe.
Let me preface this by saying that the filling can be anything you want. Don't eat meat or have meat on hand...add tofu and more veggies. The possibilities with the filling are many. This version that I share with you right now is made with what I had on hand last night 'cause let's face it...I wasn't about to run (and by run, I mean waddle) to the store to get more ingredients for the filling.
Fast + Easy egg rolls
Ingredients:
+ground pork/chicken/beef/turkey OR Tofu (firm)
+Veggies - I usually like to add water chestnuts (coarsely chopped), bean sprouts, shredded cabbage & carrots (just grab a coleslaw bag at the store), 3 sprigs of green onions
+Asian rice noodles (optional - I usually don't add these)
+Oyster sauce (you can also use stir fry sauce or a bit of soy sauce)
+egg roll wraps
+sweet chili sauce, soy sauce or any other sauce for dipping
1)Start your rice - in our house brown rice, jasmine rice or sushi rice is what we use. None of this fluffy, dry Uncle Ben's "rice".
2)In a wok/pan brown meat. When cooked drain (if needed) and add veggies and sauce. If you're not using meat add veggies and sauce and cook for about 5 minutes, then add tofu.
Remove filling from heat and set up next to wraps and plate for made egg rolls. You can find the egg roll wraps in the produce section.
Follow directions on back of wrap package. I like to have a little dish of water nearby to help seal the end of the egg roll.
While rolling the egg rolls have oil heating up.
Once oil is hot enough place egg roll into oil until golden brown.
Serve with rice (brown, white or fried with a bit of soy sauce and snow peas) and your favorite dipping sauce. This sweet chili sauce rocks our world!
Again, you can add anything to this recipe. The only thing you really need is the egg roll wraps. They last a while before they go bad so it's nice to always have them on hand.
You can even make dessert egg rolls with a yummy cream cheese and fruit filling and then roll golden wraps into some cinnamon and sugar.

I noticed your message at the top about being in Utah. My first thought was "You poor girl. You are driving to Utah and you will be big and pregnant." I went to Utah at 35 weeks and it was terribly uncomfortable.
Mmmm, I love egg rolls/spring rolls. My sister-in-law is Thai (her aunt owns the Thai Kitchen in Provo), and her mom makes the best spring rolls I've ever had. We're invited to their house this weekend. I can't wait.

I have never even thought to make my own egg rolls. They look SO yummy! I've never even seen egg roll wraps... do you have to look anywhere special for those?
