{Easy yumminess and some ?'s}

I have a yummy recipe I've been meaning to share for months now but kept forgetting to take a picture and what's a recipe without a photo...ummm...nothing! Last night I rememberd to take a picture so I can now share this recipe with you.

White Chicken Tortilla Soup

Ingredients:
4 ounce can of diced green chili's (you can make your own if you prefer)
4 cups chicken stock
1 rotisserie chicken - I get mine from Costco. Remove meat and cut chicken in to bite size pieces( you can also use 2 lbs cooked boneless, skinless chicken).
2 tablespoons finely chopped garlic
1/2 cup diced yellow onion
4 tablespoons extra virgin olive oil (EVOO)
2 cans Great Northern Beans (white beans)
1 cup sweet white corn (optional)
1 tablespoon fresh lime juice
1/4 teaspoon ground cumin
salt and pepper to tasteDirections:
In a large pot saute onions and garlic in the EVOO over medium high heat for 4 minutes. Add chicken stock, green chili's, cumin, salt and pepper. Bring to a boil. Reduce heat, add chicken, sweet white corn and beans. Simmer for 10-15 minutes.

To thicken soup and add body: Add 3 tablespoons of cornstarch in a cup-sized container, mix as little cold water as possible to form a thin paste. Bring the soup back up to a boil; stir with 1 hand and pour the paste in slowly with the other. Continue to cook on high heat for a minute, then reduce to low. The soup will look cloudy at first but will clear up and thicken slightly. Remove from heat.

Add Cilantro and lime juice.

Garnish/toppings: sour cream, Mexican style shredded cheese, corn chips (you you can make your own - see below), lime wedges, chopped cilantro, chopped chives.

This soup is delicious and very easy to make (especially if you get the chicken like I do and use corn chips). It yields about 8-12 servings.

Make your own strips:
Fry corn tortilla strips in 350 degree F oil for 2 minutes until crispy. Drain well on paper towels. Cut into strips.

Questions

Here's a few questions that have been discussed amongst friends lately and I'm curious to see what your answers would be. I've answered them as well.

1.Do you prefer to drink from a plastic or glass cup? Depends. Usually prefer glass, however I have a giant blue cup I keep filled all day that is hard plastic.

2.Water with or without ice? With ice ALWAYS. I prefer the pebble ice (think Sonic - did you know you can buy their ice?)

3.Fruity dessert or chocolate? Chocolate 8 times out of ten.

4.Favorite brand of orange juice? Simply Orange

At home: Glass, no ice. Outdoors: Dasani or Fiji, no ice. Chocolate (of course it is...I buy it in 22lb. bags!) Fresh or Simply Orange. For special occasions I buy ice from the meat department (their ice machine makes Sonic size ice) at Hyvee and we use it to make snow cones! Yummy. Still on for Saturday? Call me.

that soup sounds really good, i have chicken enchilada soup on the menu for tomorrow. i will try your recipe next time (don't have all the ingredients and don't want to shop)

oh and i love costco rotisserie chicken too.

How funny! I have that exact same recipe and we eat it like twice a week. It's seriously SO GOOD. I will have to try rotisserie, I usually just use breasts. THANKS!

*I'm like you, I have a large plastic cup I use, that I keep full of water. I very rarely use anything else, everyone knows that's mom's cup!
*I love ice in my water. But I have super sensitive teeth, so I have to let the ice melt before I drink it, as to not let the ice touch the teeth.
*Um, is there anything BUT chocolate? Oh, okay, I do enjoy fruit DIPPED in chocolate. :0)
*We have several orange trees in our backyard so we never purchase OJ, we ususally just squeeze a bunch and then freeze it to have on the 'off months.'

2. Ice, ice, ice!!! I like cold drinks- no warm water, eek!

4. Not a huge OJ fan- if I drink it, it's gotta have zero pulp and I'm happy. :)

You make me laugh - I love your questions, especially the first one. I wonder who sparked that question?
1. I usually drink from glass at the dinner table, but all day I carry around a Nalgene bottle full of water. (yes, it has BPA, Josh said I need to get a new one)
2. Usually no ice. However, I do LOVE sonic ice. It's kinda like you are drinking a snow cone, minus the flavoring.
3. Chocolate
4. Simply Orange - no pulp!

I totally want that soup now. It looks so good! I'm always a sucker for soup! I think I can say ditto to all of your answers to the questions. However, I don't have a hard blue plastic cup...I usually just drink water from my water bottle all day. But isn't Simply Orange the absolute best orange juice ever? Do you like it with pulp or pulp free?

Yummy recipe. For those looking to save a little cash, you can buy a big bag of dried Great Northern Beans and and cook them in the crockpot the day before. Freeze the extra beans for the next time you make Tortilla Soup or White Chili.

1. I'm not against plastic (especially for my midgets), but I prefer glass... more specifically my strawberry glass.
2. Water without ice... sensitive teeth don't appreciate it.
3. Chocolate with a hint of fruit involved is WONDERFUL, but that being said I go dark rich chocolate almost any day of the year.
4. All orange juice that isn't some sort of Tang/Capri Sun/Sunny D imitation.

That soup looks fantastic. Can't wait to try it, (maybe tonight since it is snowing where I live) I have loved every recipe you have posted!

1. Glass at my house, plastic at my Mother in laws (weird I know)
2. I love Ice I can't stand to drink water unless it has Ice in it! I too love Sonic Ice.
3. Fruity Dessert unless it is Strawberries dipped in Chocolate but I guess that still is a fruit.
4. Minute Maid O.J. I crave it all the time especially when I am pregnant.

1. Glass. I really don't like drinking out of plastic.
2. With ice. Too bad my fridge doesn't dispense sonic ice, that would be awesome :)
3. Chocolate, for sure. I do love a good fruit cobbler with ice cream, though!
4. Simply Orange. And it has to be pulp free! I love orange juice and theirs is so yummy. My girls love it too, especially Anna. If only it wasn't so expensive. I still buy it every time, though!
