To me, Valentine's day is just another way/opportunity to show how much you love those around you. Obviously loving someone is a constant, continual thing and not a once a year thing...at least that's how I role :).
Any holiday that gives me the excuse to make cupcakes, sugar cookies and any other delectable treats all month long is a good one to me.

While making them we talked about things and people we loved and appreciated (FHE was all about sharing some love). I'm pretty sure the reason those cupcakes tasted so good was because of all the love that went into making them.
Another sweet treat we made a few days ago was for Ella's school birthday treat (they celebrate 1/2 birthday's for those who have birthdays in the Summer). She wanted ice cream cone cupcakes. They were super easy to make and the kids loved them.
I am always asked the recipe for my buttercream frosting and thought I'd share it. I can honestly make myself sick from eating large quantities of this stuff in a short period of time.Buttercream Frosting
2 sticks unsalted butter, room temperature (through trial and error I have found that Land 'O Lakes or Kerrygold Pure Irish butter is the best)
4 1/2 cups powdered sugar
1 tsp meringue powder (optional)
1/2 salt
1 tsp vanilla (real is always better than imitation in my opinion)
food coloring (optional)
milk
*mix butter for approx. 3 minutes on high - butter will look whipped
*add salt, vanilla and meringue powder
*slowly add sugar in small portions, making sure sugar is fully incorporated before adding more
*mixture will be very thick at this point. Add about milk until you reach desired consistency. I like mine pretty thick so I add about 1 tbsp of milk. Enjoy!
How do you feel about Valentine's day? What kind of cake do you prefer for cupcakes (white, yellow, chocolate, red velvet)?

20 people are bringing SEXY back:
Those ice cream cupcakes are the bomb diggity!! I love them!!
I love the picture of the ice cream cupcakes. So cute.
I like Valentine's Day. My mom did a good job of celebrating it. We would wake up to chocolate truffles for breakfast and a love note from my parents.
For me, I decorate with the things from my relationship with my husband. Cards on the mantle, jewelry boxes stacked and engagement picture up. The holiday is about love after all, right?
Wow it is a real holiday over there? Hmmm brain ticking what can I do???
Well, Valentines is our Anniversary...not because we love it so much but just because it happened to work out that way. So, I actually get gipt (sp?) with the combo. o-well
My mom always did cute things on Valentines day and so I have always loved it and love to do sweet things for our family.
I agree about V-day. Not commercial here=and lovin it!
Thanks for the recipe. I really like my frosting recipe, but had it on a cake I made Sunday and was feeling bored and ready for something new. I'll try yours! ;)
ohhhh...i've been thinking of making sugar cookies for valentines...i think i was just convinced! those cupcakes look so yummy-and i prefer dark chocolate, yellow, and red velvet...can't have too many favorites, right:) go v-day!!!
I am a huge Valentine's girl! I always love that holiday, and especially with kids around, little holidays always seem more special :) I love either chocolate or red velvet and I have to try that frosting! We love making cupcakes, too! Yours are too cute! Happy February to you girls, xo!
LOVE LOVE LOVE Valentines Day! I always have. I completely agree that it is what you make of it. It gives me the excuse to get crafty and bake lots of sweet treats. LOVE IT! Especially coming up with fun ideas to surprise those that I love the most. I try my best to do it year round--but Valentines just gives me another fun way to show it. The one thing that I am however, very "ANTI" about-- is getting/sending roses! Oh my crap are you kidding me??? If Steve ever sent me a dozen red roses on Valentines Day I would A: gag B: be ticked he spent $50+
Other than that.....bring on the LOVE!!
PS: Oh yeah and those cupcake cones are stinkin cute! We will most definitely be attempting to make those very soon! Thanks for the idea.
And I DO love flowers, just on other days of the year!!
that buttercream frosting sounds really good! maybe we'll have to make a batch of our own pink cupcakes.
chocolate please!
I love Valentine's Day. But only since I've been married. Before I was always single and that just blew chunks. My mom always came through though. And my dad. In high school I always got deliveries of flowers or candy.
man i love my parents.
I don't buy boxed mix except for Cherry Chip and Cherry Frosting...they rule the world! I agree with Andrea on the flowers, especially when the day after they will be back down to 11.99 a dozen.
I love white cake. I especially love cream cheese frosting. I like valentine's day. I won't turn down a free day of celebration for anything. You don't have to buy a dang thing for it, just eat and enjoy each others company!
I really hope you continue to make such yummy treats when you move to California! I hate baking, but I love to eat anything sweet. I will trade off babysitting for cupcakes!
ummmm...i am a valentine's day fanatic. l-o-v-e the holiday!!
i celebrate it more with my kids- we have a special dinner...make cards. plus i am obsessed with glitter & i get to use lots of it on this holiday ;)
and i can eat ANY kind of cupcake- i do not discriminate!
You are amazing. Ithink there is nothing you don't do. Those cupcakes are great. That frosting sounds so good. I will have to try it. I LOVE Valentines day. Definitely a favorite for me.
All cupcakes in general are a delicious to me. I really love the ones in the hy-vee bakery though when they are still cold. SOOOO good!
That is awesome!! We just made cupcakes for a heart baby, and I did the same thing when the kids weren't looking. After all, I was going to take a picture!!
Yor cupcakes look way fancier than mine!
This is such a great idea! I am doing cupcakes for this monday's FHE, that's it!
